Do you know what September is?!?!

It’s our favorite month of year; NATIONAL HONEY MONTH!! We love bees, honey, and beekeeping and love that there is a whole month dedicated to it! What I love most is that I finally found the perfect job; most people say that after time they can’t stand where they work. Guess what? I don’t have that problem; we love talking about bees so much!! There are so many honey varieties and so many ways to use them!  I am so excited to share these fun facts this year and hope you enjoy anything new that you learn!

1- If you are thinking of planting raspberry and blackberry bushes bee aware that it will take time before you see fruit! They take a full year to establish before they will produce fruit the following year! Fruit honeys are the best and worth the wait!

2-Raw straight from the hive honey has oligosaccharides; this natural sugar serves as a prebiotic in the gut!

3-Medicinal uses of honey dates back thousands of years; from Sumerian art to Greek literature honey spans a multitude of times and cultures.

Early Sumerian art and Greek writing talk about using raw honey for medicinal use for 1,000’s of years! From open wounds to pain relief, honey has been used for everything!

4-Raw honey can bee used every day it is nature’s best sweetener and as always don’t over indulge!

5-Raw honey will not cause inflammation, like white sugar can, because raw honey is an anti-inflammatory!

6-True manuka honey is only produced in New Zealand and Australia; it contains a powerful chemical called methylglyoxal. This is what makes manuka honey so wonderful for wound healing! Please check out “The Honey Revolution” by Ron Fessenden for more details on manuka honey!

7-Children under 1 years of age should not have honey due to the fact their immune system is not fully matured. After 1 year of age they are ready to handle all of the nutrients that honey has to offer.

8-Raw honey contains 18 bioflavonoids; these are antioxidants that fight for your body and prevent damaging effects from free radicals!

9-Food for thought; Bees collect nectar from the bee-autiful flowers you see everyday and make honey. Honey is highly nutritional and our bodies are able to break down and use every molecule. White sugar is made from sugar cane or sugar beets and has to be processed and refined to where there is no nutritional value. Corn syrup and High fructose corn syrup are made from cornstarch which is also refined and processed and is foreign to the human body. This year we hope you make the switch to something that is better for your body and enjoy the nutritional benefits you receive.

Honey, Royal Jelly, and Skin Care

Do you ever look at a skin care product and wonder why honey and royal jelly are used?

At The Honey Cottage, one of the many questions customers ask is, “doesn’t honey make you feel sticky”? The neat thing about honey is when it is used in a complete formula it actually is not sticky. Summer honey fruit salad

There is nothing that celebrates summer more than all the luscious fruit that is coming in! I keep forgetting that honey can be used in anything and everything and this is one of our favorite ways to eat honey, especially for fighting allergies. So, I wanted to show how easy it is just to add a little bit of honey to the diet. It not only boosts the immune system, but it is super easy to use! I toss the apples and bananas in the honey and orange/ lemon juice to keep them from browning and to add a little extra flavor to the recipe.

Ingredients:

¼ cup- blueberries

4 strawberries

8 grapes

1 mandarin orange

2 Tbsp. Pecans

2 Tbsp. Walnuts

2 Tbsp. of orange juice or lemon juice

Honey

¼ cup of apples

½ of a banana

Directions: 

Wash the blueberries and put them in a bowl, then slice up the strawberries into quarter slices and place them in the bowl, next slice the grapes and mandarin orange into halves (since they are small you can keep them whole too) and place them the bowl. Smash the walnuts and pecans into bite sized pieces and add them to the fruit bowl.

In a separate bowl; mix the orange or lemon juice and the honey together thoroughly and put a side.

Take the apple and cut it into bite sized pieces and place in the honey sauce, then slice up the banana, and add it to the apples and honey sauce. Toss together lightly coating all pieces of fruit.

Add the apples and bananas to the other fruit lightly toss again and serve! ENJOY!

Tips:

-Try using honeyville’s raspberry whipped honey to add some extra flavor

-Take out the pecans and walnuts and try with sunflower seeds

-Try adding a ¼ of pineapple chunks

Do you know that bee pollen and honey are a superfood? 

This is one of my favorite snacks to enjoy before bedtime or for breakfast with fruit. I find that pairing the honey with a protein is a great way to keep my blood sugars levelThe honey gives me the glucose I need to feed my brain all night or all dayThis recipe is one of the best ways to get the nutritional benefits of bee pollen, honey, hemp seeds, and the cocoa nibs; plus it is easy and quick to make.  It is hearty, filling, made with all raw foods, and nutrient dense. You can dip apples in this, eat it by itself, or put it on pancakes or toast. I hope you enjoy this as much as I do!! 

Ingredients:  

1/3 cup Peanut butter   

Tbsp. honey 

1 ½ tsp. hemp seeds 

tsp. bee pollen 

2 tsp. cocoa nibs 

½ cup of walnuts 

Directions: 

Take the peanut butter, honey, hemp seeds, bee pollen, and mix them together. Then add the cocoa nibs and walnuts to the top and lightly fold. Spread on your favorite breakfast or eat it with apples. Refrigerate any portion that is not used to keep it fresh. ENJOY!

Tips: 

  • Try this recipe with cbd honey 
  • Add goji berries to boost the super foods 
  • Instead of using cocoa nibs use chocolate chips

Why CBD honey? What is it good for? 

We have been noticing an increase in people wanting to stop taking pills and stop the side effects they are having by taking them. They are looking for another way to decrease pain. Decrease anxiety. Decrease sleep insomnia. They want to have a product that they enjoy taking and using on a daily basis. At The Honey Cottage we have taken the plunge and have been making CBD honey; the CBD is from hemp. We only use a Raw Honey from Colorado then we add CBD isolate. There are three reasons why we use CBD isolate; it is fast acting, there is no chance of THC, and it is 99% CBD. The CBD isolate is perfect for those using it for relaxation, anxiety attacks, stress, and sleep issues.  

The reason why CBD honey works is because people actually use the honey! There is a wide variety of people using this; from young adults, to parents, to elderly. What they love it that it is like using any other honey that you would get here at The Honey Cottage and you don’t realize you are getting the benefits of the CBD. The CBD honey can be used on toast, in tea and coffee, or just taking a table spoon by itself. What we love about it is that the flavor of the CBD is covered by the sweetness of honey. Honey Bread

Have you noticed that when you make a change and try to go back it is not the same?

That is what we have noticed with our homemade honey bread. Frank has been making and perfecting this recipe for over 3 months (I am so proud of my cooking family)! We tried to have bread the other day that was not ours and it just tasted terrible and left us feeling terrible. I am so excited to share this recipe with you because we have been able to make; bread, hamburger buns, rolls, the best cinnamon bread ever, and hoagies with this same recipe!  What is really awesome is that it is only a few ingredients and we know what is going into our homemade bread! There are a few tricks that we have learned that we have made notes on as well. We love it and hope you enjoy it too!

Ingredients:

½ cup honey

2 cups of water (Hot 110°)

2 ½ TBSP yeast

7-8 cups of ground wheat berries (room temperature)

1 ½ tsp. salt

¼ cup butter (room temperature)

¼ cup coconut oil

2 eggs (room temperature)

Directions:

Put honey and water in mixing bowl and blend together, add yeast and let set for 2 to 3 minutes.

Put the ground wheat berries and salt into a bowl

In another bowl place the eggs, butter, and coconut oil mix together thoroughly

After the 3 minutes set time for the water add 3 cups of flour mix and let set 3- 5 minutes

After set time mix on slow speed and add the egg, oil, and butter mixture. Then add the four cups of flour, 1 cup at a time.

*Use the last cup of flour

Turn up the speed of the mixer and mix together for 5 minutes until a nice dough ball forms without sticking to the bowl.

Knead the dough for 1 to 2 minutes, put into an oiled bowl, place dough in oven next to a pot of boiling water for 1 hour do NOT cover the dough.

After 1 hour; knead the dough again and form into loafs (makes 2 large loaves)

Let rise in the oven next to a pot of boiling water; about 40 minutes. Do NOT cover loaves

Bake at 375° for 25 minutes

Let cool thoroughly before slicing or storing.

Tips:

  • Slice medium slices off the bread and use it for French toast (it is soo good)
  • Add 1 cup of raisins and 1 Tbsp. of Ceylon cinnamon for cinnamon raisin bread
  • Try using blueberry, Rocky Ford wildflower, or rabbit brush honey to change the flavor of the bread

We have super exciting news at The Honey Cottage; we now have Practical Herbs products in our shop!!! We are working very closely with Barbara to bring unique products that are amazing for your skin and your health. She is a Certified Medical Assistant, a Certified Nurse Assistant, an Herbalist, is a member of women’s P.O.W.E.R., is a mom, and grandmother. She has been perfecting her body care line for 27 years and makes everything in small batches. She has an entire baby skin care line, aromatherapy play dough, bath salts, bath bombs, and whipped hand and body frosting. She also has the best deodorant I have ever used in my life; usually when I use deodorants I really smell. Her deodorant is made with ingredients that combat that problem. What I am really excited about is everything that has a colorant is colored with Mica! All of her products are made with essential oils and natural scents. No nasty chemicals and everything leaves you feeling like a Queen Bee! She also has a line of handcrafted body care with CBD!! We have lots of products just in time for Territory Days May 25-27 in Old Colorado City!

Blueberry Peach Honey Cupcakes

Have you ever tasted happiness?

Spring is here and there is no better way to celebrate then with this recipe.  Honeyville makes a blueberry peach butter that just makes your mouth happy. We really enjoy using this in yogurt, oatmeal, and in our cupcakes! If you leave off the topping you can use these for morning breakfasts. If you want a swirl effect; mix everything together and swirl the blueberry peach butter in at the end.  We hope this recipe makes you as happy as it does for us! Happy Spring!!

Ingredients:

1 cup- Apple sauce (room temperature)

¼ cup-Honey

½ cup- Coconut oil (liquefied)

¾ cup- Honeyville’s Blueberry Peach butter

2 cups- Ground wheat berries

1 tsp. Cinnamon

1 tsp. Baking soda

Topping:

1 pint- Heavy cream

¼ cup of honey

Directions:

Pre-heat oven to 375 degrees F. Mix together the apple sauce, honey, coconut oil, and blueberry peach butter. Then add the flour, baking soda, and cinnamon; mix until everything is thoroughly mixed. Line cupcake pans with cupcake liners and spray with your favorite cooking spray. You can also use FSC certified baking cups, these do not need to be sprayed. Fill the baking cups with batter a little over half way full; makes about 15-16 cupcakes. Place in the oven and cook for 15-18 minutes or until the tooth pick comes out clean, then pull out of the oven and let cool. Some ovens work differently so make sure to keep an eye on them. While the cupcakes are cooling; pour the heavy cream into a mixer and start to whip at a medium speed. Add ¼ cup of honey to the whip cream and whip it until it makes firm peaks when pull the whip up. When the cupcakes are nice and cool, top them with the whip cream. Enjoy!

Tips:

  • Try using a buttercream frosting as a topping
  • Try using Honeyville’s bumbleberry jam
  • Swirl ¼-½ cup of the blueberry peach butter into the whipping cream for extra flavor

The Health Benefits of Honey and Wheat Berries

I have a secret to share with you; we cannot eat at restaurants anymore! I have switched over the majority of my diet to clean healthy foods. As a family we are 100% on wheat berries for all of the bread products we make at home! A week ago, we snuck out for a family meal; I had some chicken, coleslaw, and waffle fries. That night I started having pains in my abdomen, which continued all through the next day, and got worse. I thought we were going to have to go to the hospital; thankfully it finally calmed down that night. The hours of pain were just the worst and showed me that I need to be more careful what goes in my body.  What we have been learning over the past months and changing has made a huge difference in only two months. We are so stunned with what real food can do for you that we have to share with the whole world. 

There are so many chemicals in our daily diet it can be hard to avoid them! This is one of the reasons we work with only organic wheat berries. Another reason is because they are LOADED in vitamins and minerals that you do not get from store bought pre-processed flours; even the organic ones. Wheat berries are also a great protein source, fiber, omega- 3 Fatty acids, betaine, and plant lignans. All of this combined is what benefits your body and fights against; inflammation, type 2 diabetes, gallstones, carcinogens, food allergies, and reduces cardiovascular disease. These are just some of the small benefits we have seen and felt in our own body.   

Raw honey is the same way! When it is raw and unprocessed it is loaded in vitamins, minerals, trace minerals, probiotics, prebiotics, enzymes, proteins, flavonoids, and amino acids! These are important for your diet and your immune system!! These are all the benefits you can receive when you buy raw straight from the hive honey. Most store-bought honeys are pasteurized or ultra- pasteurized which KILL all of the benefits you can get from raw honey. Not to mention you get the benefits of glucose; which feeds your brain and fuels your body. All raw honey has sugars that benefit your body and feeds your body usable sugars that are from…flowers!!!  Sugar is processed and derived from sugar cane; all the nutritional properties are lost in this process.  The bees get everything that you get from honey from flowers! That is it! Nothing else is added 

My new saying is, “think before you eat.” If you think you should not eat it or if something does not seem right; it does not belong in your body!

Honey Fajita’s

Honey Fajitas

There are just some days when you want a really good fajita and this recipe is phenomenal! The chicken and beef come out so tender and flavorful. I also really liked that the saltiness of the Worcestershire sauce was complimented by the sweetness of honey. I used Rocky Ford honey because I really like the flavor it brings to this dish. What I love most about this combination is that you can place this on a tortilla or on top of salad greens and have an amazing meal no matter what! You can also add extra vegetables to add more flavors too! I hope you are as buzzed about this recipe as much as I am!

Ingredients:

1 pound Chicken

1 pound Beef

¼ cup Honey

2 Tbsp. Worcestershire sauce

2 Tbsp. olive oil

2 tsp. salt

1 tsp. pepper

2 green peppers

½ a sliced onion

½ cup sliced mushrooms

½ cup of Monterey Jack Cheese

½ cup of cheddar Cheese

½ cup Pico De Gallo- optional

1 Tbsp. sour cream- optional

Tortillas

Directions:

Cut up the chicken and the beef into slices. Take 2 gallon sized bags and put the honey, Worcestershire sauce, oil, salt, and pepper into each bag then put chicken in one and beef in the other. Tightly close the bags and move the meat around to thoroughly coat the meat; place in the meat in the fridge overnight. In the morning move the meat around again to make sure all pieces get a good coat, place back in the fridge.

Slice up the onion, green pepper, and mushrooms.

In two separate sauce pans; add a Tbsp. of olive oil to each sauté pan, put the heat in between the middle between medium and high. Add the onion to each pan and sauté until they are see through. Add the bell pepper and cook for 3 minutes. Then drain the beef in a colander and add to one sauté pan; do the same with the chicken and place in the other pan. Cook for 6-8 minutes or until the meat is at desired consistency.

Shred the cheese into a bowl.

Serve with Pico De Gallo, sour cream, and tortillas! Can serve these with beans and rice for sides!

Tips:

  • Try this recipe with shrimp
  • Add extra color by using purple onion and yellow peppers
  • Use romaine lettuce instead of a tortilla
